Makes approx. 12 mini burgers!
1 can refried black beans or 1 can black beans mashed
1 cup cooked brown rice
½ cup shredded carrots
½ cup shredded cheese
1 cup bread crumbs
1 small diced onion
1 large egg lightly beaten
Mexican/Southwest seasoning
Sautee diced onion in olive oil until soft (approx. 5 minutes).
Combine the remaining ingredients in a large mixing bowl and add in the cooked onions. Form into small burger patties.
Lightly oil pan or griddle and cook burgers about 6 minutes on each side.
Assemble on dinner roll or small bun with lettuce, tomato and chili mayo.
For mini buns: Use Rhodes frozen multi-grain roll dough, following directions on package.
